Kicked around the house this morning and cooked some... I've never done a tenderloin, so I decided on a stuffed tenderloin with apples, craisens,celery,onions, and bread crums. Topped it with a herb rub that I mixed up... Went ahead and threw on a chicken for sandwiches this week and a rack of ribs just incase I'm not feeling the tenderlion...

Now I got that trailer smoker out of the shop. I'd like to build one for the patio before I sell the trailer smoker. This go around, I'm going to do an insulated cabinet smoker. If done right, it should be able to run about 10 hrs on 4lbs of charcoal with very little monitoring... I'm going to attempt to clone the pitmaker safe. ( Pitmaker Safe) They have a pretty cool design that should be easy to replicate. Smoke enters the cooking chamber through the top of a false back wall and then exits the cooking chamber through two channels on the side that tee into a 4" exhaust pipe on top. It's wrapped with 2" of insulation... It's been about 10 years since I've done any modeling in Solidworks. Between the elapse of time and software updates, it was pretty much like I started over. It's slowly coming back to me...

Those are pretty nice, I was debating between the Backwoods and Pitmaker. I've read nothing but good remarks on the backwoods design.
2 at one time, that sounds like work...
